When I think of salad - the fist thing that pops to mind is a mix of fresh vegetables, seasoned with olive oil and lemon, or maybe balsamic vinegar - eating alone or with a meal, and sometimes with additional ingredients like egg, tuna, or grilled chicken.
Of course there are variants to that - Been salads, and potato salads… and even warm vegetable salad, but bread salad is nothing I have ever heard of before, and after a quick search of the Internet, I am really not quite sure how that happened.
Anyway, the reason I went to look it up in the first place was a post on Last Nights Dinner with the most scrumptious looking bread salad, with wild spring greens sauteed and roasted and toasted with fresh bread. It looks do wholesome and satisfying, and all of the commenter’s sounded as if bread salad was a standard term and everybody except me knew about it …
I happen to be growing my own greens in the garden, and will try a version of Last Nights dinner as soon as I get some great bread to make it with. I have already decided that to this sauteed mix of vegetables, I will add a few fresh cherry tomatoes for some tang, and some goat cheese that has that same comforting kind of taste.
