I wanted to share a dessert recipe I tried last year for Valentine's Day and that turned out to be wonderful. It's called "Sorbet aux violettes" in French.

Here's what you need:
-300 g (10.6 oz) of violettes de Toulouse:

-50 g (1.7 oz) of sugar
-1 liter (33.8 fl. oz) of water

Directions:
-Put the sugar, violets and water in a big pan. Heat it until bubbles form on the bottom of the pan (do not boil).
-Remove from heat and let it rest for 3 to 4 hours at room temperature.
-Strain the syrup to remove the violets and use the syrup in your ice-cream machine to make sorbet.
-Follow your machine's instructions for making sorbet.
