How do you make cream of tomato soup with ginger? I am not sure how much ginger to put in and at what stage?

You put the minced ginger into the hot oil with the onion and garlic when you start cooking. Don't let it get burned, just fry it until you smell its fragrance.I don't like a lot of ginger it tends to take over all other tastes. So I suggest you'd put only 2 tsp of minced ginger and decide for yourself if you like it this way.
