Hi
I have eaten wonderful fish fillets with crispy skin but can't seem to do it myself.
I have tried laying in a pan with the skin side down, and it just curled up. I also tried putting in the pan with the fillet side down and got the same results
So - How is it done?

Are you using really hot oil when placing the fillets in the pot?

1) Use a grill, not a pan.
2) Get it really hot.
3) Oil the grill with a papertowel soaked in oil.
4) Rub the fish with oil.
5) Start with the skin side up.
6) Baste again with oil, then turn once to skin side down.

I will try that! I never thought about doing it in the grill, and for sure I thought the skin should be face down
Just goes to show that you learn something new everyday.
