I want to make stuffed tomatoes, without meat, and not a whole lot of rice. Any Ideas what I can use?

You can add any kind of nuts, root vegetables (cut to small pieces). You can use wheat groats instead of rice.

Use the tomato as the stuffing for a bell pepper.

Peel small tomato. Cut green bell pepper in half lengthwise, remove seeds, place on baking pan. Place 1 garlic clove sliced very thin in each pepper half. Set one peeled tomato in each pepper half. Place two sardines in a cross pattern on each tomato. Drizzle olive oil and a little salt over each tomato so it drains into pepper half. Broil.

This goes very well with veal saltimbocca a la Roma and a nice Barbara.

Under no circumstances should one forget good crusty bread for this dish, per Simon Hopkinson. I agree!
