Is there a time saving trick to separating the leaves of thyme from the stalk - It takes me for ever, and there must be a better way.

I use the tender tops of the stems and just chop along with the leaves. If the stems are tough and woody I just grasp them between thumb and forfinger and just scrape the leaves off with the end of my thumb. But the tender stems are perfectly OK to use.
For soups and stews I throw a whole branch in, woody stems and all. Eventually during the simmer, the leaves fall off and the whole woody branch can be removed.
