Please suggest some good things to make with beetroot. I already make Russian borscht, Also, a salad with pecan nuts and garlic, and a vinaigrette salad with onions. I have even stuffed them, but still want more options. Thanks.

There's a great Moroccan salad made of fresh beetroot. You grate the beetroot, add a lot of chopped coriander leaves lemon, olive oil, garlic, cumin and salt.
