Poulet Saute au Vinaigre

Description: Simon Hopkinson's dish (from roast Chicken and other stories) that he based on Michel Guerard's recipe from the Sunday Times in the early '70s. We served it with boiled potatoes and candied carrots from our winter garden. A bottle of Pinnacles Ranches Estancia '07 Chardonnay was a fair (inexpensive) wine.

    ...and make your own vinegar, darn it!

    We ended up leaving the Chardonnay with the apps and went with an '06 Louis Jadot Pinot Noir Bourgogne. Darn, it is difficult to pair acidic dishes, but this worked nicely with the tomato and vinegar that supercedes the chicken flavor by a country mile.
