Funny how things seem to appear at the exact moment they are needed.
Due to certain dietary needs of my family, I have been looking for ways to feed them in the morning with little as possible fresh milk products, and white flour.
Muffins seemed the way to go, and not having much experience in the muffin field, I have been trying my hand (and luck) with several recipes….The fist, with Cinnamon and apple sauce had to much sugar, and were a little to spicy for a breakfast food (although they were accepted with much excitement and joy by my brood), the second recipe I tried was with raisins, and also borderline acceptable - they were a little like English scones - and needed to have butter added to them to make them really great, plus the original recipe calls for 4 tsps of baking powder which is a bit of an over kill, and though I cut it down to 3 the second time round, it still seems like a lot to me, and there is a hint of unpleasantness in the taste due to this, kind of a tingle on the tongue that I attribute to the baking powder.
Well, I put the whole muffin issue aside for a while and was actually looking for some luscious desert recipes when I came across the perfect muffins for my brood.
I never thought of baking with sweet potatoes - I have often made carrot cake but for some reason never considered sweet potatoes backing material.
These are definitely going to be the next muffins I try.
