What have you found the best way to cook a turkey? This is my first time, and I am doing it without stuffing. I found 2 sites with different information (one said to start high for 20 minutes and then go on a low temp for 6 hours (according to my birds weight) and the other said to start at 375 with 1/2 a cup water on the pan, and bake for 4.5 hours. Which do you think is better?

I cook turkeys quite often. The best way I've found is this: For a 13 to 18 pound bird: Make a compound butter using 2 cloves of garlic (minced), 1 tsp dried thyme, 1/2 tsp pepper, 1 tsp dried tarragon (or your favorite herbs) and 1/4 cup butter, or you can use plain butter. Push it under the skin of the breast and thighs being careful not to tear the skin. Rub a little on the outside of the bird as well.
Put the bird on a roasting rack inside a roasting pan so it will catch the drips. Bake at 250 degrees for 4 hours. Remove from oven and wrap the bird completely and solidly in foil. Put back in oven and bake another 4 hours at 250 degrees.
When you remove it from the oven, don't remove the foil right away. Wrap it in a towel and put it in a cooler to keep it hot for 1 hour. Now remove the towel and foil and serve. It will be steaming hot and very tender.
