When I make cheese fondue the oil in the cheese separates once its heated... I am sure this is not meant to happen, and was wondering if there is anyway to avoid it?

Add a table spoon of corn starch to a table spoon of lemon juice, add mixture to fondue. Wisk like crazy over med to med high heat. Don't stop wisking.
